Paleo & Grain-Free Granola (Keto Friendly Option)

Ingredients

  • 1/3 cup walnuts (chopped)
  • 1/4 cup pumpkin seeds ,
  • 1/4 cup almonds (chopped)
  • 1/2 cup coconut flakes (chopped)
  • 2 tablespoons ground flax ,
  • 6 tablespoons almond butter (chopped)
  • 2 tablespoons coconut oil (chopped)
  • 2 tablespoons pure maple syrup (chopped)

Instructions

  • Preheat oven to 350 F and prepare a baking sheet with parchment paper. Place all the dry ingredients into a stand alone mixer and stir until combined. Add in the remaining wet ingredients and mix until well incorporated (I used the paddle attachment). Spread the mixture in one even layer on the baking sheet. Bake for 12-15 minutes, stirring every 5 or so minutes. Granola will harden as it cools. Notes Store granola in an airtight container for up two weeks
