Paleo & Grain-Free Granola (Keto Friendly Option)
- 1/3 cup walnuts (chopped)
- 1/4 cup pumpkin seeds
- 1/4 cup almonds (chopped)
- 1/2 cup coconut flakes (chopped)
- 2 tablespoons ground flax
- 6 tablespoons almond butter (chopped)
- 2 tablespoons coconut oil (chopped)
- 2 tablespoons pure maple syrup (chopped)
- Preheat oven to 350 F and prepare a baking sheet with parchment paper.
- Place all the dry ingredients into a stand alone mixer and stir until combined.
- Add in the remaining wet ingredients and mix until well incorporated (I used the paddle attachment).
- Spread the mixture in one even layer on the baking sheet.
- Bake for 12-15 minutes, stirring every 5 or so minutes.
- Granola will harden as it cools.
- Store granola in an airtight container for up two weeks
