Paleo & Grain-Free Granola (Keto Friendly Option)

Ingredients

  • 1/3 cup walnuts (chopped)
  • 1/4 cup pumpkin seeds
  • 1/4 cup almonds (chopped)
  • 1/2 cup coconut flakes (chopped)
  • 2 tablespoons ground flax
  • 6 tablespoons almond butter (chopped)
  • 2 tablespoons coconut oil (chopped)
  • 2 tablespoons pure maple syrup (chopped)

Instructions

  • Preheat oven to 350 F and prepare a baking sheet with parchment paper.
  • Place all the dry ingredients into a stand alone mixer and stir until combined.
  • Add in the remaining wet ingredients and mix until well incorporated (I used the paddle attachment).
  • Spread the mixture in one even layer on the baking sheet.
  • Bake for 12-15 minutes, stirring every 5 or so minutes.
  • Granola will harden as it cools.

  • Store granola in an airtight container for up two weeks
