Fluffy Keto Waffles
- 1 1/2 cups almond flour
- 2 tablespoons coconut flour
- 1/2 teaspoon baking powder
- 1 teaspoon baking soda
- 2 whole eggs
- 1 tablespoon maple extract
- 2 tablespoons Swerve Sweetener (or zero calorie sweetener of choice)
- 2 tablespoons melted butter
- 1 1/4 cups milk (or zero calorie sweetener of choice)
- Add all ingredients to a large bowl or stand mixer.
- Mix well until smooth.
- Let sit for 5 minutes.Preheat waffle iron and coat with non stick spray, butter, or coconut oil.Pour batter into waffle iron and cook for 3-4 minutes until golden brown on each side.
- Place in the oven to crisp while you repeat cooking remaining waffles.
