Ingredients

  • 1 can solid pack pumpkin (Libby's)
  • 1 cup almond meal (Libby's)
  • 1/2 cup coconut flour (Libby's)
  • 4 large eggs
  • 1/2 cup heavy cream
  • 1 stick butter (Libby's)
  • 1 1/2 teaspoons vanilla
  • 2 teaspoons pumpkin pie spice
  • 1/2 teaspoon baking powder
  • 1/2 cup erythritol (Libby's)

Instructions

  • Pre-heat oven to 350 Place all ingredients in a mixing bowl and mix on high until light and fluffy Grease a loaf pan with coconut oil Pour bread mix into loaf pan and bake for 70-90 minutes
