Southwest Crispy Chicken Thighs

Ingredients

  • 4 bone in chicken thighs (large)
  • 2 jalapeno chilies
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 3 black pepper (large)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 3/4 teaspoon chili powder
  • 1/4 teaspoon cumin
  • 1/4 teaspoon cayenne pepper

Instructions

  • In a small mixing bowl, mix together salt, pepper, garlic powder, onion, powder, chili powder, cumin, and cayenne pepper Slowly whisk in 2 tablespoons of olive oil to make the marinade Slice the jalapenos about 1/4 inch thick.
  • Place chicken thighs in Ziplock bag with sliced jalapenos Pour the marinade over the chicken and work with hands to ensure the thighs are evenly coated.
  • Let Marinade for 4-6 hours.
  • Place the chicken skin side up on a sheet pan with some of the jalapenos and bake at 400 degrees for 30 minutes.
  • Pour off the grease that is on the baking sheet and flip the chicken.
  • Bake for another 25-30 minutes.
  • (If you are using smaller thighs, you may need to bring the total baking time down to 50 minutes.) Serve garnished with green onions and a lime wedge
