Cauliflower "Tater" Tots (low-carb, keto)

Ingredients

  • 2 1/2 cups riced cauliflower (cooked & cooled)
  • 2 large eggs
  • 1/3 cup shredded cheddar cheese
  • 1/3 cup shredded mozzarella cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon onion powder

Instructions

  • 1.
  • Make sure riced cauliflower is cooked and cooled before beginning the rest of the recipe 2.
  • Preheat oven to 425° 3.
  • Line a baking sheet with pachment paper 4.
  • Mix ALL ingredients in a mixing bowl 5.
  • Use a 1 Tbsp measurement to form tots (I made 16) 6.
  • Bake for 25-35 minutes or until golden brown and firm 7.
  • Serve!
