Taco Stuffed Avocado {Keto, Low-Carb}

Ingredients

  • 6 avocado (large
  • 1 pound lean ground beef
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon cumin
  • 1 tablespoon chili powder
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon oregano
  • 1/4 cup tomato sauce
  • 1/3 cup shredded cheese
  • 1/4 cup chopped tomatoes
  • chopped cilantro (large, cut in half, pit removed and 2 tbsp of the inside scooped out)
  • 6 lime slices

Instructions

  • Place cut avocados on a platter.
  • Place beef in a large skillet and cook for2-3 minutes, stir frequently and crumble the beef.
  • Drain the grease.
  • Add the seasoning and tomato sauce.
  • Cook for 3-4 more minutes or until cooked through.
  • Fill avocado shells with the filling.
  • Top with cheese, tomatoes, avocado (or guacamole if you decide to make), squeeze some lime juice and a add additional toppings of your choice.
  • Serve immediately.
