Easy Low-Carb, Keto Spinach Dip

Ingredients

  • 4 cups baby spinach (finely chopped)
  • 1 tablespoon butter
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/3 cup heavy cream
  • 1/8 teaspoon nutmeg (finely chopped)
  • 1/2 cup artichoke hearts (finely chopped)
  • 1 cup mozzarella cheese
  • 1/4 cup parmesan cheese (finely chopped)

Instructions

  • Melt the butter in a saucepan.
  • Add the chopped spinach, cook for 2 minutes, until wilted.
  • Add salt, pepper, garlic and nutmeg.
  • Add the cream cheese, with the heat on low, using a wooden spoon or spatula, incorporate the cream cheese into the spinach.
  • Add the cream.
  • Add the artichoke hearts.
  • Mix in 1/2 of the mozzarella cheese.
  • Transfer to a small oven safe baking dish.
  • Top with the remaining mozzarella and parmesan cheese.
  • Bake for 20-15 minutes, until the cheese is bubbly.
  • Serve.
