Caprese Skewers

Ingredients

  • 2 cups cherry tomatoes (or baby heirloom, 300g / 10.6 oz)
  • 2 cups mozzarella cheese (or baby heirloom, 300g / 10.6 oz)
  • 1/2 cup olives (or baby heirloom, 300g / 10.6 oz)
  • 2 tablespoons green pesto (or baby heirloom, 300g / 10.6 oz)
  • 2 tablespoons fresh basil (or baby heirloom, 300g / 10.6 oz)

Instructions

  • Wash the tomatoes and basil.
  • I used green and kalamata marinated in oregano and extra virgin olive oil.
  • Mix the mozzarella with the pesto.
  • Assemble the skewers by piercing the tomatoes, mozzarella and olives.
  • Garnish with fresh basil.
  •  Enjoy! 🙂
