Caprese Skewers

Ingredients
- 2 cups cherry tomatoes (or baby heirloom, 300g / 10.6 oz)
- 2 cups mozzarella cheese (or baby heirloom, 300g / 10.6 oz)
- 1/2 cup olives (or baby heirloom, 300g / 10.6 oz)
- 2 tablespoons green pesto (or baby heirloom, 300g / 10.6 oz)
- 2 tablespoons fresh basil (or baby heirloom, 300g / 10.6 oz)
Instructions
- Wash the tomatoes and basil.
- I used green and kalamata marinated in oregano and extra virgin olive oil.
- Mix the mozzarella with the pesto.
- Assemble the skewers by piercing the tomatoes, mozzarella and olives.
- Garnish with fresh basil.
- Enjoy! 🙂
