Ingredients

  • 1 pound sausage casings (mild or hot Italian, removed)
  • 1 cup pork roast ,
  • 6 slices bacon ,
  • 1/2 cup chopped onion ,
  • 2 garlic cloves (mild or hot Italian, removed)
  • 4 cups bone broth (mild or hot Italian, removed)
  • 10 ounces frozen chopped spinach (mild or hot Italian, removed)
  • 1 cup heavy whipping cream ,
  • kosher salt ,
  • ground black pepper (mild or hot Italian, removed)
  • 1/2 teaspoon dried basil leaves ,
  • 1/4 teaspoon dried leaves oregano ,
  • 1/4 teaspoon red pepper flakes ,
  • 1 tablespoon parmesan cheese (mild or hot Italian, removed)

Instructions

  • Cut up the bacon and take the sausage out of the casings, and brown until no longer pink. Add the chopped onion and garlic, and cook until translucent and onions are softened, about 5 min. Add the stock, a little at first and scrape up all the brown bits--that's GREAT FLAVOR and you can't leave it stuck to the pot, then add the remaining stock. Then add the spinach and let that melt into the soup. Stir now and then, for about 15 minutes (or longer if you forget about it). Add the cream and heat through, but don't boil. Now's a good time to package up for freezing.
