Keto Mounds Fat Bombs

Ingredients
- 2 cups unsweetened shredded dried coconut
- 1/4 cup coconut oil (may need to add 1 T. extra)
- 1/2 teaspoon vanilla extract
- 4 tablespoons butter (may need to add 1 T. extra)
- S tevia In The Raw (or liquid stevia to taste
- 3 squares unsweetened baking chocolate
- 1 tablespoon coconut oil
- S tevia In The Raw (or liquid stevia to taste)
Instructions
- In food processor, combine first 5 ingredients.
- Refrigerator until set.
- Don't allow to refrigerate too long, or the dough will become rock hard!
- Roll into ~1" balls (a little smaller).
- Place on parchment paper-lined baking sheet.
- Refrigerate.
- In saucepan, melt chocolate.
- Add coconut oil and sweetener.
- Dip coconut balls completely into chocolate mixture and return to baking sheet.
- Freeze until you want to eat.
