Keto Mounds Fat Bombs

Ingredients

  • 2 cups unsweetened shredded dried coconut
  • 1/4 cup coconut oil (may need to add 1 T. extra)
  • 1/2 teaspoon vanilla extract
  • 4 tablespoons butter (may need to add 1 T. extra)
  • S tevia In The Raw (or liquid stevia to taste
  • 3 squares unsweetened baking chocolate
  • 1 tablespoon coconut oil
  • S tevia In The Raw (or liquid stevia to taste)

Instructions

  • In food processor, combine first 5 ingredients.
  • Refrigerator until set.
  • Don't allow to refrigerate too long, or the dough will become rock hard!
  • Roll into ~1" balls (a little smaller).
  • Place on parchment paper-lined baking sheet.
  • Refrigerate.
  • In saucepan, melt chocolate.
  • Add coconut oil and sweetener.
  • Dip coconut balls completely into chocolate mixture and return to baking sheet.
  • Freeze until you want to eat.
