Ingredients

  • 2 cups unsweetened shredded dried coconut ,
  • 1/4 cup coconut oil (may need to add 1 T. extra)
  • 1/2 teaspoon vanilla extract ,
  • 4 tablespoons butter (may need to add 1 T. extra)
  • S tevia In The Raw (or liquid stevia to taste,
  • 3 squares unsweetened baking chocolate ,
  • 1 tablespoon coconut oil ,
  • S tevia In The Raw (or liquid stevia to taste)

Instructions

  • In food processor, combine first 5 ingredients. Refrigerator until set. Don't allow to refrigerate too long, or the dough will become rock hard! Roll into ~1" balls (a little smaller). Place on parchment paper-lined baking sheet. Refrigerate. In saucepan, melt chocolate. Add coconut oil and sweetener. Dip coconut balls completely into chocolate mixture and return to baking sheet. Freeze until you want to eat. Serving Size: Makes ~25 balls Number of Servings: 25
