Keto Cottage Pie

Ingredients

  • 1 yellow onion (large, diced)
  • 1 cup carrots (large, diced)
  • 500 grams cauliflower
  • 1 tablespoon butter
  • 1 pound ground beef
  • 1/2 cup green peas
  • 1 cup beef (large, diced)
  • 40 grams butter
  • 4 tablespoons half & half
  • 112 grams cheese (large, diced)

Instructions

  • Preheat oven to 410F.Add 1tbsp butter to pan and saute onion until translucent.Increase heat to High, add ground beef, and cook until browned.
  • Add seasonings as desired (salt, pepper, garlic, cayenne).Reduce heat to Medium, add carrots, and cook 5 minutes.Add peas and cook 4 minutes.Increase heat to High, add beef boullion, and simmer until sauce has reduced slightly (10-15minutes).
  • Steam cauliflower in the microwave until tender (in 5 minute increments).Add 40g butter and 2 tbsp half and half to the steamed cauliflower.
  • Blend until smooth.
  • Season with salt & pepper to taste.Put meat mixture in a baking dish (9x9) and top with cauliflower mash.
  • Top with cheese.
  • Bake 20 minutes.
  • Allow to cool for 5 minutes before cutting.
