Ingredients

  • 2 pounds boneless skinless chicken thighs
  • 3 tablespoons almond butter (smooth, unsweetened, or other nut butter)
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 2 teaspoons salt
  • 3 tablespoons coconut oil
  • 1 cup rhubarb (smooth, unsweetened, or other nut butter)
  • 1 cup strawberries (smooth, unsweetened, or other nut butter)
  • 1 pinch salt
  • 1/2 cup diced onions
  • 2 garlic cloves (smooth, unsweetened, or other nut butter)
  • 1/2 cup cilantro (smooth, unsweetened, or other nut butter)
  • 1 lemon (squeezed)
  • 2 tablespoons olive oil
  • 2 tablespoons coconut aminos
  • 3 cups cauliflower rice

Instructions

  • Pre-heat your oven to 400F.
  • In a bowl combine all of the salsa ingredients and gently toss.
  • Set aside.In the casserole dish mix together chicken thighs, nut butter, coconut oil, and seasoning.
  • Toss and mix, slathering the chicken.
