Cauliflower Mac & Cheese (low-carb, keto)

Ingredients

  • 1 pound cauliflower florets
  • 1/2 cup heavy cream
  • 1 tablespoon butter
  • 4 ounces cheddar cheese
  • 1/2 teaspoon dijon mustard (optional)
  • 1/4 teaspoon garlic powder

Instructions

  • Prepare cauliflower to desired tenderness 2.
  • In a small pot, over MEDIUM heat, melt butter 3.
  • Add heavy cream and bring to a simmer 4.
  • Mix in dijon mustard, garlic powder, salt, and pepper 5.
  • Slowly add cheese (about 1 oz at a time) and mix until all cheese melted (water can be used here if you prefer a thinner cheese sauce) 6.
  • Reduce heat to LOW and add cauliflower 7.
  • Mix until cauliflower is completely covered 8.
  • Remove from heat and serve!
