Cauliflower Mac & Cheese (low-carb, keto)

  • 1 pound cauliflower florets ,
  • 1/2 cup heavy cream ,
  • 1 tablespoon butter ,
  • 4 ounces cheddar cheese ,
  • 1/2 teaspoon dijon mustard (optional)
  • 1/4 teaspoon garlic powder ,
  • salt ,


  • Prepare cauliflower to desired tenderness 2. In a small pot, over MEDIUM heat, melt butter 3. Add heavy cream and bring to a simmer 4. Mix in dijon mustard, garlic powder, salt, and pepper 5. Slowly add cheese (about 1 oz at a time) and mix until all cheese melted (water can be used here if you prefer a thinner cheese sauce) 6. Reduce heat to LOW and add cauliflower 7.
