Keto Berry Mug Cake

Ingredients

  • 2 tablespoons almond flour (16 g/ 0.6 oz)
  • 1 tablespoon coconut flour (16 g/ 0.6 oz)
  • 1/8 teaspoon baking soda
  • 1 tablespoon erythritol (16 g/ 0.6 oz)
  • 1 large eggs (16 g/ 0.6 oz)
  • 1/2 teaspoon vanilla extract (16 g/ 0.6 oz)
  • 1 tablespoon extra virgin coconut oil (16 g/ 0.6 oz)
  • 5 drops liquid stevia (16 g/ 0.6 oz)
  • 3 berries (can be mixed
  • 2 tablespoons heavy cream (16 g/ 0.6 oz)

Instructions

  • Place all the dry ingredients in a mug or ramekin and combine well.

  • add coconut oil, vanilla extract, ...

  • stevia and mix well.
  • Top with berries.
  • Try berry stevia or plain stevia drops from SweetLeaf.
  • Microwave on high for 60-90 seconds.
  • Optionally, serve with cream or coconut milk.
  • Preheat the oven to 175 °C/ 350 °F and cook for about 12-15 minutes or until cooked in the centre.
