Almond Arugula Pesto
- 2 cups rocket leaves (fresh baby)
- 1/2 cup olive oil
- 1 clove garlic
- 2 tablespoons almonds
- In a food processor, pulverize the clove of garlic and almonds.
- Add in olive oil and arugula and process until the leaves have been chopped and a paste forms.
- Add more oil if it thicker than you would like.
- Add salt and pepper a small pinch at a time and mix in.
- Stop adding when it tastes right to you!
