Almond Arugula Pesto

  • 2 cups rocket leaves (fresh baby)
  • 1/2 cup olive oil
  • 1 clove garlic
  • 2 tablespoons almonds


  • In a food processor, pulverize the clove of garlic and almonds.
  • Add in olive oil and arugula and process until the leaves have been chopped and a paste forms.
  • Add more oil if it thicker than you would like.
  • Add salt and pepper a small pinch at a time and mix in.
  • Stop adding when it tastes right to you!
