Almond Arugula Pesto

Ingredients

  • 2 cup rocket leaves ((fresh baby))
  • 1/2 cup olive oil
  • 1 clove garlic
  • 2 tbsp almonds

Instructions

  1. In a food processor, pulverize the clove of garlic and almonds.
  2. Add in olive oil and arugula and process until the leaves have been chopped and a paste forms.
  3. Add more oil if it thicker than you would like.
  4. Add salt and pepper a small pinch at a time and mix in.
  5. Stop adding when it tastes right to you!
