Ten Minute Veggie Fried "Rice" with Ham (Low Carb) Yum

Ingredients

  • 1 tablespoon oil
  • 1 1/2 cups ham (cubed)
  • 3 1/4 teaspoons soy sauce (cubed)
  • 1 clove garlic
  • 1 piece ginger (cubed)
  • 1/4 teaspoon crushed red pepper flakes
  • 1 head broccoli florets (cubed)
  • 1/2 cup water
  • 1/4 teaspoon sesame oil
  • 12 ounces riced cauliflower

Instructions

  • This recipe comes together very fast.
  • Make sure you have all your ingredients cleaned, chopped, and ready to go before starting.
  • Have a plate handy to place the cooked ham on.
  • Heat a large skillet over high heat and add the oil and the ham.
  • Let the ham brown for 2 minutes then add 1/4 teaspoon of soy sauce.
  • Toss to coat then remove ham to the plate.
  • Add the garlic, red pepper flakes, and ginger.
  • Cook for 30 seconds then add broccoli and water.
  • Simmer the broccoli over high heat until the water evaporates 4-5 minutes.
  • Add the 3 teaspoons of soy and the ham, toss to combine, then push it all over to one side of the pan.
  • Crack the eggs in the other side and quickly scramble them.
  • When they are done mix it all together.
  • Add the cauliflower and the sesame oil.
  • Toss until heated through.
  • Top with desired condiments.
