French Onion Dip Chicken Salad (Whole30, Paleo, Keto)
- 2 chicken breasts (poached, how to here)
- 3 tablespoons paleo mayonnaise (poached, how to here)
- 3 tablespoons onion seasoning mix (poached, how to here)
- 1 cucumber (peeled and seeded)
- 1/4 cup fennel (poached, how to here)

- Poach the chicken breast, then let it cool.
- If you don’t know how to poach chicken you can do it two ways, stove top in a skillet with a lid and some water (link above) or throw it in your pressure cooker with some water.
