Keto Kung Pao Chicken
Ingredients
- 1 TBSP sesame oil
- 4 chicken breasts
- 1 cup peanuts
- 4 green onions
- 8 oz snap peas
- 4 TBSP B raggs Liquid Aminos (or gluten free soy sauce)
- 2 TBSP rice vinegar
- 1 TBSP hoisin sauce
- 4 tsp grated ginger
- 1 TBSP chopped garlic
- 1 TBSP sesame oil
- optional bib lettce or riced cauliflower
Instructions
- In a large skillet or wok, heat sesame oil.
- Add chicken pieces and cook until golden brown.
- you may need to cook in smaller batches depending on the size of your skillet.
- While chicken is cooking, mix together the sauce ingredients in a separate bowl.
- Once all chicken is cooked and golden, add veggies and peanuts.
- Add the sauce and mix until chicken is well-coated.
- Cook for a minute or two until vegetables become just slightly tender.
- Add chili sauce if desired.
- Serve over a bed of cauliflower rice or lettuce wrap style.
