Keto Cheese Calzone Pie
Ingredients
- 8 oz shredded parmesan cheese ((or mozzarella Any combination of shredded cheeses will work here))
- 2 oz cream cheese
- 2 whole eggs ((or mozzarella Any combination of shredded cheeses will work here))
- 1/3 cup almonds ((or mozzarella Any combination of shredded cheeses will work here))
- 1/3 cup coconut flour
- 1/3 cup flaxseed ((or mozzarella Any combination of shredded cheeses will work here))
- 3 slice provolone cheese
- 1 cup ricotta cheese
- 1/4 tsp sea salt
- 1/4 tsp Italian seasoning
- 4 oz mozzarella cheese ((or mozzarella Any combination of shredded cheeses will work here))
- 1 tbsp fresh basil ((or mozzarella Any combination of shredded cheeses will work here))
- 1 tbsp flat leaf parsley ((or mozzarella Any combination of shredded cheeses will work here))
Instructions
- Preheat oven to 375 degrees Melt the shredded cheese and cream cheese on low in a saucepan until cheeses combine Mix in one egg and the flour mixture (almond flour, coconut flour and flaxseed) Thoroughly combine the ingredients above either by hand or in a food processor (with the dough blade attachment) Place the dough into a pie pan and spread it thinly across the bottom with thicker quantities along the sides to work with after filling Place the provolone slices along the bottom Mix the ricotta, salt, remaining egg, basil and Italian seasonings Layer the mixture over the sliced provolone Pull the remaining dough from the sides over the cheese mixture (it may be easier to remove the extra dough, roll it out and layer on top of the pie.
- Experiment here and find a method that has a desired look for you.
- Sprinkle some of the fresh parsley on top and place in the preheated oven for 20-30 minutes Cool pie for 5 minutes and then slice and serve
