Bacon & Gruyère Jalapeño Poppers and Why You Should Avoid Factory Farmed Meat

Ingredients

  • 12 jalapeno chilies (deseeded, ~ 170g / 5.9 oz)
  • 1 cup ricotta cheese (deseeded, ~ 170g / 5.9 oz)
  • 1/2 cup gruyere cheese (deseeded, ~ 170g / 5.9 oz)
  • 24 slices pancetta
  • 12 slices bacon
  • 2 tablespoons chopped cilantro (deseeded, ~ 170g / 5.9 oz)

Instructions

  • Preheat the oven to 200 °C/ 400 °F.
  • Wash the jalapeños and pat-dry with a towel.
  • Halve and deseed the jalapeños.
  • Mix the grated Gruyère cheese, ricotta and finely chopped cilantro (or parsley).
  • Fill each jalapeño halve with the cheese mixture.
  • If too wide, halve each bacon slice lengthwise.
  • Wrap each jalapeño halve in the bacon slice and place on a baking rack or a baking sheet lined with parchment paper.
  • Bake for 20-25 minutes until golden and crispy.
  • Serve hot or cold - Enjoy!
