  • 2 cup unsweetened shredded coconut
  • 4 cup water
  • 1 tsp vanilla extract (optional)

Instructions

  1. Combine the shredded coconut and water in a blender.
  2. Blend on high speed for 2-3 minutes until the mixture is well combined and the coconut is finely ground.
  3. Strain the mixture through a nut milk bag or fine mesh strainer into a bowl, discarding the leftover solids. You can save the coconut pulp for other recipes.
  4. If desired, stir in the vanilla extract for added flavor.
  5. Transfer the coconut milk to a sealed container and refrigerate for up to 5 days.
