Ingredients
- 2 cup unsweetened shredded coconut
- 4 cup water
- 1 tsp vanilla extract (optional)
Instructions
- Combine the shredded coconut and water in a blender.
- Blend on high speed for 2-3 minutes until the mixture is well combined and the coconut is finely ground.
- Strain the mixture through a nut milk bag or fine mesh strainer into a bowl, discarding the leftover solids. You can save the coconut pulp for other recipes.
- If desired, stir in the vanilla extract for added flavor.
- Transfer the coconut milk to a sealed container and refrigerate for up to 5 days.
