Keto Paleo Meatloaf

Ingredients

  • 1 onions (small)
  • 2 garlic cloves
  • 1 mushrooms (pack)
  • 700 g ground pork
  • 1 tbsp tomato paste
  • 1 tsp worchestershire ((small))
  • 1/4 cup almond milk
  • 1/4 cup blanched almond flour
  • 1 tbsp oregano
  • 1 tbsp thyme
  • 1 tsp Himalayan salt
  • 1 tsp black pepper
  • 1 cup diced tomatoes
  • 1/2 tsp basil
  • 1/2 tsp parsley

Instructions

  1. Preheat the oven to 180C/350F.
  2. Mince the garlic and onion.
  3. Thinly slice the mushrooms.
  4. Combine all of the meatloaf ingredients in a large bowl and knead with your hands until combined.
  5. Stuff the meatloaf mixture in a 9 x 5" loaf pan.
  6. In a small pot, combine the tomato sauce ingredients and simmer for a couple of minutes just to combine the spices.
  7. Pour over the loaf pan making sure nothing spills out.
  8. Place in the oven and bake for 50 minutes.
  9. Take it out of the oven and let rest 10 minutes.
  10. Serve and enjoy!!
