Gingerbread Star Keto Cookies

Ingredients

  • 4 cup almond flour
  • 1 cup stevia ((granulated, or equiv))
  • 2 tbsp ginger ((granulated, or equiv))
  • 1 tbsp cinnamon ((granulated, or equiv))
  • 2 tsp baking powder
  • 1/2 tsp sea salt
  • 1/2 tsp clove ((granulated, or equiv))
  • 1/4 cup unsalted butter ((granulated, or equiv))
  • 2 tbsp molasses ((granulated, or equiv))
  • 1 1/2 tsp vanilla

Instructions

  1. Preheat your oven to 275 F.
  2. Line two baking sheets with parchment paper.
  3. Whisk together In a large bowl: almond flour, stevia, ginger, cinnamon, baking powder, sea salt and cloves.
  4. Stir in eggs, butter, molasses and vanilla, just until dough comes together.
  5. Place half the dough on a large piece of parchment paper.
  6. Top with another piece of parchment paper.
  7. Roll the dough into a thin sheet, about 1/4 inch thick.
  8. Press cookie cutters into dough, cutting into desired shape.
  9. Gently loosen the dough from the cookie cutter, lifting with a spatula, and place onto prepared baking sheets.
  10. Combine scraps and re-roll, cutting out more cookies until no dough is left.
  11. Repeat with second half of dough.
  12. Bake 20 minutes (until golden brown) and firm to the touch.
  13. Remove, let cool 5 minutes on the baking sheet, then transfer to a wire rack until cool.
  14. If you’re piercing or notching out the cookies, cut while still warm.
  15. TIP: For crispy cookies, bake at 225 F, 50 to 60 minutes.
  16. Remove from oven and let cool completely on the baking sheet.
