Easy Low-Carb, Keto Spinach Dip

Ingredients

  • 4 cup baby spinach ((finely chopped))
  • 1 tbsp butter
  • 1/4 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/3 cup heavy cream
  • 1/8 tsp nutmeg ((finely chopped))
  • 1/2 cup artichoke hearts ((finely chopped))
  • 1 cup mozzarella cheese
  • 1/4 cup parmesan cheese ((finely chopped))

Instructions

  1. Melt the butter in a saucepan.
  2. Add the chopped spinach, cook for 2 minutes, until wilted.
  3. Add salt, pepper, garlic and nutmeg.
  4. Add the cream cheese, with the heat on low, using a wooden spoon or spatula, incorporate the cream cheese into the spinach.
  5. Add the cream.
  6. Add the artichoke hearts.
  7. Mix in 1/2 of the mozzarella cheese.
  8. Transfer to a small oven safe baking dish.
  9. Top with the remaining mozzarella and parmesan cheese.
  10. Bake for 20-15 minutes, until the cheese is bubbly.
  11. Serve.
