Cold Salmon Salad With Citrus Viniagrette

Ingredients

  • 16 ounces salmon fillets
  • 4 cups lettuce
  • 1/4 red onion (sliced thin)
  • 1 tomatoes (chopped)
  • 1 cucumber (sliced)
  • 1/4 cup orange juice (sliced thin)
  • 1/2 cup avocado oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon dried thyme

Instructions

  • Place the lettuce mix, sliced onions, cucumbers and tomatoes on individual plates.
  • Cut the cold salmon into 1" chunks and layer over vegetables.
  • To make the viniagrette:
  • In a pint sized jar or bottle, add fresh squeezed orange juice, avocado oil, salt, pepper, rosemary, and thyme.
  • Shake or whisk to combine.
  • Pour 1/4 of the mixture over each salad and serve.
