Spaghetti Squash Casserole

Ingredients

squash

Instructions
Preheat oven 400 and grease a 13 x 9 pan.Place squash cut side down on pan and bake for 40 minutes or until tender.Once cooked take a fork and scrape squash strands into a large bowl.Sauté onion in olive oil for 3 - 4 minutes.Add tomato's and mushrooms and cook 4 - 5 minutes.Add turkey sausage crumbles and cook 3 minutes or until mixture is dry.Add cottage cheese, mozzarella, parsley and onion mixture to the bowl with the squash.
Stir to mix.Put mixture into squash shells and bake 40 - 50 minutes or until heated through.Sprinkle with Parmesan cheese and bake until melted.
