Start with the crust and mix the coconut flour, erythritol and salt together in a bowl.
In a separate bowl, mix the coconut oil, eggs, butter and vanilla extract.
Slowly add in the dry ingredients to the wet ingredients bowl, and mix until they form a dough.
Grease a pie pan and evenly press the dough around the edges of the pan and into the bottom.
bake the pie crust for 10 minutes at 350 degrees and then let the crust cool.
Next, cover your crust with the chopped pecans.
In another bowl, mix all of the filling ingredients together with a whisk.
Pour the filling mixture over the pecans and pie crust.
Bake for 45-50 minutes at 350 degrees and then let the crust cool.
