Base
Heat skillet on medium heat.
Also preheat the oven to 425 degrees.
Chop onion, and garlic and bacon.
Saute onion and garlic in skillet with butter and cook until onions are translucent.
Add bacon and cook 2 minutes.
Add cauliflower and cook until cauliflower is al dente (we will finish it off in the oven)
Cheese Mixture
Combine butter, 1 cup of cheddar cheese, cream cheese, and heavy cream in a small saucepan.
Cook on low heat until eveything is melted together.
Season to taste with salt and pepper.
Transfer the cauliflower base to a large mixing bowl and add cheese mixture.
Stir to combine.
Place in a baking dish and top with 1/2 cup of cheddar cheese.
Crush pork rinds to top to garnish.
Bake for 10 minutes and then broil for 3-5 minutes to crisp the top of dish.
