Keto Mac & Cheese

Ingredients

  • 1/2 head cauliflower
  • 2 slices bacon
  • 1/2 white onion (Medium, Diced)
  • 2 cloves garlic (Medium, Diced)
  • 2 tablespoons butter
  • 2 tablespoons butter
  • 2 tablespoons cream cheese
  • 1 cup cheddar cheese (Medium, Diced)
  • 1/4 cup heavy cream
  • 1/2 cup cheddar cheese (Medium, Diced)
  • 1/2 ounce pork rind

Instructions

  • Base Heat skillet on medium heat.
  • Also preheat the oven to 425 degrees.
  • Chop onion, and garlic and bacon.
  • Saute onion and garlic in skillet with butter and cook until onions are translucent.
  • Add bacon and cook 2 minutes.
  • Add cauliflower and cook until cauliflower is al dente (we will finish it off in the oven) Cheese Mixture Combine butter, 1 cup of cheddar cheese, cream cheese, and heavy cream in a small saucepan.
  • Cook on low heat until eveything is melted together.
  • Season to taste with salt and pepper.
  • Transfer the cauliflower base to a large mixing bowl and add cheese mixture.
  • Stir to combine.
  • Place in a baking dish and top with 1/2 cup of cheddar cheese.
  • Crush pork rinds to top to garnish.
  • Bake for 10 minutes and then broil for 3-5 minutes to crisp the top of dish.
