Roast Pork Belly

Ingredients

  • 2 lb pork belly
  • 2 tsp salt
  • 1/2 tsp pepper
  • 2 tsp olive oil

Instructions

  1. Score the skin of the pork belly in a crosshatch pattern using a sharp knife, being careful not to cut into the meat.
  2. Pat the skin completely dry with paper towels, then rub the olive oil all over the scored skin.
  3. Season generously with salt and pepper, making sure to push the seasoning into the score marks.
  4. Place the pork belly skin-side up on a rack set over a roasting pan.
  5. Roast at 450°F (230°C) for 30 minutes to start crisping the skin.
  6. Reduce the oven temperature to 325°F (160°C) and continue roasting for 1.5 to 2 hours until the meat is tender and the skin is crackling.
  7. Let rest for 10-15 minutes before slicing and serving.
