Roast Pork Belly

Ingredients
- 2 lb pork belly
- 2 tsp salt
- 1/2 tsp pepper
- 2 tsp olive oil
Instructions
- Score the skin of the pork belly in a crosshatch pattern using a sharp knife, being careful not to cut into the meat.
- Pat the skin completely dry with paper towels, then rub the olive oil all over the scored skin.
- Season generously with salt and pepper, making sure to push the seasoning into the score marks.
- Place the pork belly skin-side up on a rack set over a roasting pan.
- Roast at 450°F (230°C) for 30 minutes to start crisping the skin.
- Reduce the oven temperature to 325°F (160°C) and continue roasting for 1.5 to 2 hours until the meat is tender and the skin is crackling.
- Let rest for 10-15 minutes before slicing and serving.
