Keto Egg Fried Rice

Ingredients

  • 3 cup cauliflower
  • 2 cup cooked shrimp
  • 3 cup white mushrooms
  • 2 piece spring onions
  • 1 tbsp ginger root
  • 1 tbsp hot pepper
  • 3 whole eggs
  • 1/2 cup almonds
  • 2 tbsp fresh basil
  • 2 tbsp mint leaves
  • 2 tbsp cilantro
  • 1/2 piece lime juice
  • 2 tbsp coconut aminos
  • 1 tbsp fish sauce
  • 3 tbsp ghee ((Clarified Butter))
  • 1/4 tsp sea salt ((Clarified Butter))

Instructions

  1. Prepare the Cauli-rice by grating the cauliflower.
  2. Don't cook it.
  3. Grate the ginger and finely chop the chili peppers.
  4. Place on a large heavy-based pan greased with ghee, butter or coconut oil.
  5. Cook briefly for 2-3 minutes over medium-high heat.
  6. Add sliced mushrooms and cook for another 3 minutes (white mushrooms contain less carbs than brown).
  7. Add the cauli-rice and mix in well.
  8. Season with salt to taste and cook for another 5 minutes while stirring frequently.
  9. Finely chop the spring onion and add it to the pan together with the peeled, cooked prawns.
  10. In a bowl, scramble the eggs and pour in the pan while stirring.
  11. Cook for 1-2 minutes.
  12. Mix in the coconut aminos and fish sauce.
  13. Add freshly chopped herbs, lime juice and cook for a minute.
  14. Take off the heat and set aside.
  15. Add toasted flaked almonds.
  16. To toast the almonds, simply place them on a pan and roast over medium-high heat.
  17. Do not grease the pan and roast for 2-3 minutes while stirring frequently to prevent the almonds from burning.
  18. Done - enjoy!
