Keto Breakfast Muffins

Ingredients

  • 2 breakfast cereals ((servings Plain Keto & Co. Hot))
  • 4 tbsp coconut oil ((servings Plain Keto & Co. Hot))
  • 4 large eggs
  • 2 tbsp heavy whipping cream
  • 2 tbsp flax seed meal
  • 2 tbsp erythritol
  • 1 tsp vanilla extract
  • 1 tsp baking powder

Instructions

  1. Preheat oven to 350F.
  2. Mix together Plain Keto and Co Plain Hot Breakfast Cereal and melted coconut oil until well combined.
  3. Add in all of the other ingredients and mix thoroughly until there's no lumps remaining.
  4. Pour batter evenly between 8 cupcake wells.
  5. Bake for 18-20 minutes.
  6. Let cool and enjoy!
