Ingredients

  • 2 tbsp grass-fed butter ((unsalted))
  • 3/4 cup blanched almond flour ((unsalted))
  • 2 tbsp coconut flour ((unsalted))
  • 2 tbsp flax seed meal ((unsalted))
  • 1/2 tsp salt
  • 2 tsp gluten-free baking powder
  • 4 large egg whites ((unsalted))

Instructions

  1. You might want to scroll up and watch the video to see the technique.
  2. Cut butter into pea sized pieces, place in freezer.
  3. Preheat oven to 425 degrees F.
  4. Measure all dry ingredients.
  5. Mix together well.
  6. Once butter is frozen, mix with dry ingredients, place in freezer.
  7. Beat egg whites until stiff.
  8. Mix into dry ingredients.
  9. Form into a round disc.
  10. This will be cross between dough and batter.
  11. This will make 8 to 10 biscuits.
  12. the biscuits will increase in size.
  13. Bake on a baking stone if you have one, or use parchment paper.
  14. Spray with baking spray.
  15. I find that a baking stone or griddle works best.
  16. A cookie spatula works great to remove them, as it is extra thin.
  17. Bake for 16-18 minutes until golden brown.
  18. You might want to try it that way! Also you can make these into four large biscuits for sandwiches.
