Garlic Shrimp Caesar Salad Recipe [Paleo, Keto]

Ingredients

  • 1 lb shrimp ((shell removed))
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 3 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 head romaine lettuce ((shell removed))
  • 1 cucumber (chopped into cubes)
  • 1 tsp dijon mustard
  • 1/4 cup paleo mayonnaise ((shell removed))
  • 1 tbsp fresh lemon juice
  • 1 tbsp parsley ((shell removed))
  • 1 tbsp sliced almonds ((shell removed))

Instructions

  1. Preheat oven to 400F.
  2. Mix the shrimp, olive oil, lemon juice, garlic, onion powder, salt and pepper together.
  3. Place shrimp on baking tray and roast for 10 minutes.
  4. To make the salad dressing, blend the mayo, mustard, lemon juice, garlic powder, salt and pepper together.
  5. Toss the dressing with the chopped lettuce, chopped cucumber, and roasted shrimp.
  6. Garnish with the chopped parsley and sliced almonds.
