Creamy Spicy Keto Pulled Pork Chili
Ingredients
- 3 pulled pork ((or more cups))
- 1/2 coconut milk ((or more cups))
- 1 cup stock ((or more cups))
- 1/2 diced onions ((or more cups))
- 1 medium tomatoes
- 1 fresh chili ((or more cups))
- 1/2 dried chile ((or more cups))
- 1 cayenne pepper ((or more cups))
- 1 paprika as needed (level teaspoon)
- 1 tsp lemongrass ((or more cups))
- 1 tsp garlic
- 1/2 dried basil ((or more cups))
- 1/2 ground black pepper ((or more cups))
- salt (to taste)
- 2 tbsp cooking oil ((or more cups))
Instructions
- In a pan at medium heat, add cooking oil and heat it up.
- Add the onion and fry until they start to turn golden brown.
- Add the garlic and fry for a further minute the add the tomatoes.
- Leave it cook to a sauce for about 4 to 5 minutes.
- Add on the pulled pork, stir and mix well then add the rest of spices and seasonings.
- Mix well and then add the stock, and bring to a simmer.
- Add the coconut milk, stir and leave it to simmer.
- Leave it cook and reduce down until the sauce is to your liking.
- Serve over your vegetables or mash of your choice
