Cinnamon Chocolate Coconut Flour Cookies / Keto / Low Carb / Paleo / Gluten Free / Sugar Free / Nut Free

Ingredients

  • 4 tablespoons coconut flour
  • 3 tablespoons unsweetened cocoa powder
  • 1 tablespoon cinnamon
  • 1 teaspoon baking powder (Aluminum-Free)
  • 1 tablespoon stevia powder (Aluminum-Free)
  • 1 pinch salt
  • 1/3 cup coconut oil (Aluminum-Free)
  • 1 teaspoon vanilla extract
  • 1 tablespoon unsweetened shredded dried coconut (Aluminum-Free)

Instructions

  • Preheat the oven to 180 C / 350 F.
  • In a medium bowl, whisk together the dry ingredients.
  • (I use this stevia powder.)
  • Add the wet ingredients and mix well.
  • Let sit for a couple minutes.
  • Drop one tablespoon of dough per cookie on a cooking sheet lined with parchment paper.
  • (* Arrange them into a round shape with your hands if desired.)
  • Sprinkle the shredded coconut on top (optional).
  • Bake for 13 -15 minutes
  • Allow to cool for 5 minutes on baking sheet, and then transfer to a wire rack to cool completely.
