Caprese Skewers

Ingredients

  • 2 cup cherry tomatoes ((or baby heirloom, 300g / 10.6 oz))
  • 2 cup mozzarella cheese ((or baby heirloom, 300g / 10.6 oz))
  • 1/2 cup olives ((or baby heirloom, 300g / 10.6 oz))
  • 2 tbsp green pesto ((or baby heirloom, 300g / 10.6 oz))
  • 2 tbsp fresh basil ((or baby heirloom, 300g / 10.6 oz))

Instructions

  1. Wash the tomatoes and basil.
  2. I used green and kalamata marinated in oregano and extra virgin olive oil.
  3. Mix the mozzarella with the pesto.
  4. Assemble the skewers by piercing the tomatoes, mozzarella and olives.
  5. Garnish with fresh basil.
  6.  Enjoy! 🙂
