Low Carb Pumpkin Mash

Instructions

  • Chop the pumpkin and cauliflower into uniform sized pieces.
  • Move the pumpkin and cauliflower into a saucepan and cover with water and a generous pinch of salt.
  • Place the saucepan on the stove top on a medium to high heat.
  • Bring up the boil and simmer until the pumpkin and cauliflower are soft and easily mashable.
  • Drain and pour over some cream and add some butter.
  • Depending how creamy you want it will determine how much you add.
  • Mash with a potato masher until smooth and creamy
