Waffles With Whipped Cream

Ingredients

  • 1/4 cup coconut flour
  • 1/4 cup almond flour
  • 1/4 cup flax seed meal
  • 1 teaspoon baking powder
  • 1 teaspoon stevia (or other sugar substitute)
  • 1/4 teaspoon cinnamon
  • 3/4 cup egg whites (or other sugar substitute)
  • 4 whole eggs
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon stevia (or other sugar substitute)

Instructions

  • STEP 1 To MAKE THE WAFFLES: Heat the waffle iron to medium-high heat.
  • STEP 2 Coat with cooking spray.
  • STEP 3 In a large bowl, whisk together the coconut flour, almond flour, flax meal, baking powder, stevia, and cinnamon.
  • STEP 4 In another medium bowl, beat the egg whites until stiff peaks form.
  • STEP 5 Add the whole eggs and vanilla to the dry ingredients.
  • Mix well to combine.
  • STEP 6 Gently fold the beaten egg whites into the dry ingredients until fully incorporated.
  • -Pour the batter onto the preheated waffle iron.
  • Cook according to waffle iron directions.
  • STEP 7 TO MAKE THE WHIPPED CREAM: In a medium bowl, whip the heavy cream for 3 to 4 minutes, until thick.
  • -Add the stevia.
  • Continue to whisk until stiff peaks form, about 1 minute more.
  • STEP 8 Top the waffles with equal amounts of the whipped cream and serve.
