Waffles With Whipped Cream

Ingredients
- 1/4 cup coconut flour
- 1/4 cup almond flour
- 1/4 cup flax seed meal
- 1 teaspoon baking powder
- 1 teaspoon stevia (or other sugar substitute)
- 1/4 teaspoon cinnamon
- 3/4 cup egg whites (or other sugar substitute)
- 4 whole eggs
- 1 teaspoon pure vanilla extract
- 1 teaspoon stevia (or other sugar substitute)
Instructions
- STEP 1 To MAKE THE WAFFLES: Heat the waffle iron to medium-high heat.
- STEP 2 Coat with cooking spray.
- STEP 3 In a large bowl, whisk together the coconut flour, almond flour, flax meal, baking powder, stevia, and cinnamon.
- STEP 4 In another medium bowl, beat the egg whites until stiff peaks form.
- STEP 5 Add the whole eggs and vanilla to the dry ingredients.
- Mix well to combine.
- STEP 6 Gently fold the beaten egg whites into the dry ingredients until fully incorporated.
- -Pour the batter onto the preheated waffle iron.
- Cook according to waffle iron directions.
- STEP 7 TO MAKE THE WHIPPED CREAM: In a medium bowl, whip the heavy cream for 3 to 4 minutes, until thick.
- -Add the stevia.
- Continue to whisk until stiff peaks form, about 1 minute more.
- STEP 8 Top the waffles with equal amounts of the whipped cream and serve.
