Vegan Keto Walnut Chili

Ingredients
- 1 tablespoon extra-virgin olive oil
- 1 sweet onion (small, finely diced)
- 2 carrots (finely diced)
- 3 stalks celery (small, finely diced)
- 3 cloves garlic (small, finely diced)
- 1 tablespoon ground cinnamon
- 1 tablespoon ground cumin
- 1 1/2 teaspoons smoked paprika
- 2 chipotles in adobo (small, finely diced)
- 2 bell pepper (small, finely diced)
- 15 ounces diced tomatoes (small, finely diced)
- 2 1/2 cups tomato sauce (small, finely diced)
- 1 can brown lentils (small, finely diced)
- 1 can kidney beans (small, finely diced)
- 1 can black beans (small, finely diced)
- 1 1/2 cups walnuts (small, finely diced)
- 1 1/2 ounces dark chocolate (small, finely diced)
- cilantro leaves (small, finely diced)
- avocado (Sliced)
- radishes (Sliced)
Instructions
- Heat the oil in a large pot over medium heat.
- Add the onion, carrot and celery and cook for 4 minutes.
- Add in the garlic, cinnamon, cumin and paprika and stir until fragrant, about another 2 minutes.
- Add the chipotle, bell peppers, tomatoes, beans and walnuts.
- Reduce the heat to medium-low and simmer for about 20-25 minutes until thick and the vegetables are soft.
- Stir in the chocolate and allow to melt.
- Season with salt and pepper, to taste.
