Vegan Keto Walnut Chili

Ingredients
- 1 tbsp extra-virgin olive oil
- 1 sweet onion ((small, finely diced))
- 2 carrots as needed (finely diced)
- 3 stalk celery ((small, finely diced))
- 3 clove garlic ((small, finely diced))
- 1 tbsp ground cinnamon
- 1 tbsp ground cumin
- 1 1/2 tsp smoked paprika
- 2 chipotles in adobo ((small, finely diced))
- 2 bell pepper ((small, finely diced))
- 15 oz diced tomatoes ((small, finely diced))
- 2 1/2 cup tomato sauce ((small, finely diced))
- 1 can brown lentils ((small, finely diced))
- 1 can kidney beans ((small, finely diced))
- 1 can black beans ((small, finely diced))
- 1 1/2 cup walnuts ((small, finely diced))
- 1 1/2 oz dark chocolate ((small, finely diced))
- cilantro leaves ((small, finely diced))
- avocado (Sliced)
- radishes as needed (Sliced)
Instructions
- Heat the oil in a large pot over medium heat.
- Add the onion, carrot and celery and cook for 4 minutes.
- Add in the garlic, cinnamon, cumin and paprika and stir until fragrant, about another 2 minutes.
- Add the chipotle, bell peppers, tomatoes, beans and walnuts.
- Reduce the heat to medium-low and simmer for about 20-25 minutes until thick and the vegetables are soft.
- Stir in the chocolate and allow to melt.
- Season with salt and pepper, to taste.
