Skinny Broccoli Salad
Ingredients
- 2 head broccoli ((fresh, chopped))
- 1 head cauliflower ((fresh, chopped))
- 1/2 cup red pepper ((fresh, chopped))
- 1/2 cup green pepper ((fresh, chopped))
- 1/2 red onion ((fresh, chopped))
- 1/2 cup green olives
- 1 cup tomatoes ((fresh, chopped))
- 1 cup cheddar cheese ((fresh, chopped))
- 1 cup ranch dressing
Instructions
- Chop the broccoli and cauliflower into small bite-sized florets.
- Dice the red pepper, green pepper, and red onion into small pieces.
- Halve the green olives and dice the tomatoes.
- Cube the cheddar cheese into small pieces.
- Combine all the chopped vegetables, olives, tomatoes, and cheese in a large bowl.
- Pour the ranch dressing over the salad and toss until everything is evenly coated.
- Refrigerate for at least 30 minutes before serving to let the flavors meld.
