Skinny Broccoli Salad

Ingredients

  • 2 head broccoli ((fresh, chopped))
  • 1 head cauliflower ((fresh, chopped))
  • 1/2 cup red pepper ((fresh, chopped))
  • 1/2 cup green pepper ((fresh, chopped))
  • 1/2 red onion ((fresh, chopped))
  • 1/2 cup green olives
  • 1 cup tomatoes ((fresh, chopped))
  • 1 cup cheddar cheese ((fresh, chopped))
  • 1 cup ranch dressing

Instructions

  1. Chop the broccoli and cauliflower into small bite-sized florets.
  2. Dice the red pepper, green pepper, and red onion into small pieces.
  3. Halve the green olives and dice the tomatoes.
  4. Cube the cheddar cheese into small pieces.
  5. Combine all the chopped vegetables, olives, tomatoes, and cheese in a large bowl.
  6. Pour the ranch dressing over the salad and toss until everything is evenly coated.
  7. Refrigerate for at least 30 minutes before serving to let the flavors meld.
