Shrimp Avocado Ceviche Lettuce Wraps

Ingredients

  • 1/2 lb shrimp ((fresh, jumbo size, peeled and deveined))
  • 1/4 cup fresh lime juice
  • 1/2 large tomato ((fresh, jumbo size, peeled and deveined))
  • 1 jalapeno chilies ((fresh, jumbo size, peeled and deveined))
  • 2 scallions (chopped)
  • 1/8 cup cilantro leaves ((fresh, jumbo size, peeled and deveined))
  • 1 avocado (ripe
  • 1/2 lime juice
  • 5 lettuce leaves ((fresh, jumbo size, peeled and deveined))

Instructions

  1. Chop the shrimps in half and place in a bowl.
  2. Marinate the shrimps by pouring the lime juice in the bowl until they are completely covered and are floating freely.
  3. Cover the bowl and place in the fridge for 4 hours.Mix the cilantro, jalapeno,chopped tomato, and scallions in a separate large bowl.
  4. Add salt and pepper to taste.
  5. Completely drain the shrimps using a colander and add to the large bowl.
  6. Gently toss until all the ingredients combine.
  7. Add the chopped avocado and squeeze some lime over the mixture.
  8. Prepare lettuce leaves on a plate and transfer one or two tablespoons of ceviche into the leaves.
  9. Serve.
  10. As an alternative, serve the ceviche in a dish with the lettuce leaves all around so that the guests can serve themselves.
