Ingredients
- 2 large eggs
- 2 oz cream cheese
- 20 drop stevia
Instructions
- In a blender or mixing bowl, combine the eggs, cream cheese, and stevia drops.
- Blend or whisk until the batter is completely smooth with no lumps.
- Heat a non-stick skillet or griddle over medium-low heat and lightly grease with butter or cooking spray.
- Pour about 2-3 tablespoons of batter per pancake onto the skillet.
- Cook for 2-3 minutes until the bottom is set and golden, then carefully flip.
- Cook the other side for 1-2 minutes until done. Serve warm.
