Ingredients

  • 2 large eggs
  • 2 oz cream cheese
  • 20 drop stevia

Instructions

  1. In a blender or mixing bowl, combine the eggs, cream cheese, and stevia drops.
  2. Blend or whisk until the batter is completely smooth with no lumps.
  3. Heat a non-stick skillet or griddle over medium-low heat and lightly grease with butter or cooking spray.
  4. Pour about 2-3 tablespoons of batter per pancake onto the skillet.
  5. Cook for 2-3 minutes until the bottom is set and golden, then carefully flip.
  6. Cook the other side for 1-2 minutes until done. Serve warm.
