Low Carb Vegan Rice and Beans

Ingredients

  • 2 package cauliflower rice ((frozen, 12oz/340g each))
  • 2 can soya bean ((frozen, 12oz/340g each))
  • 1/2 cup hemp seeds ((frozen, 12oz/340g each))
  • 1 cup vegetable broth ((frozen, 12oz/340g each))
  • 3 tbsp olive oil
  • 2 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp cayenne
  • 1 tbsp Mexican oregano

Instructions

  1. Add everything but the mexican oregano to your slow cooker and mix around as best as possible.
  2. Let cook on high for about 3-4 hours (depending on how your slow cooker tends to cook - see notes), until the "rice" is tender.
  3. Stir in oregiano.
  4. Garnish as desired and serve, or portion out for the week.
