Low Carb Snickerdoodle

Ingredients

  • 2 cup almond flour ((We use this!))
  • 4 tbsp erythritol ((We use this!))
  • 1 large eggs
  • 1 tsp vanilla ((We use this!))
  • 1/2 tsp baking soda ((We use this!))
  • 1 tsp cinnamon ((We use this!))
  • 8 tbsp butter
  • 1/4 tsp cream of tartar ((We use this!))
  • 4 tbsp Truvía® na ((We use this!))

Instructions

  1. Mix together room temperature butter and sugars until combined and smooth.Add vanilla, egg, cream of tartar, cinnamon and baking soda.
  2. Thoroughly mix with a hand mixer.Add almond flour and combine with a hand mixer.Using a cookie scoop, place dough on a greased baking sheet or silicon mat.
  3. Gently press each cookie down slightly.Bake at 350 degrees for 12 minutes.Remove from oven and dust with cinnamon.
  4. Allow to cool for at least 20 minutes.
  5. Enjoy!
