Ingredients

  • 3/4 cup coconut milk ((liquid, such as Aroy-D, 180 ml/ 6 fl oz))
  • 1/4 cup condensed milk ((liquid, such as Aroy-D, 180 ml/ 6 fl oz))
  • 1/4 cup fresh lime juice ((liquid, such as Aroy-D, 180 ml/ 6 fl oz))
  • 1/2 cup white rum ((liquid, such as Aroy-D, 180 ml/ 6 fl oz))
  • ice cubes
  • lime slices ((liquid, such as Aroy-D, 180 ml/ 6 fl oz))
  • liquid stevia
  • unsweetened shredded dried coconut

Instructions

  1. Prepare the condensed milk by following the instructions in this recipe.
  2. Freshly made condensed milk is liquid and thickens as you refrigerate it.
  3. Don't worry if it thickens, it will work just fine.
  4. Place all the ingredients, except for the ice, into a blender: coconut milk, keto condensed milk, lime juice, ...
  5. and white rum.
  6. Process until smooth and frothy.
  7. You can add a few drops of stevia if you prefer a sweeter taste.
  8. Fill two glasses with ice and pour over the blended coconut mixture.
  9. Garnish with lime slices and optionally sprinkle with some unsweetened shredded coconut.
  10. Enjoy!
