Low Carb Keto Induction Cornbread

Ingredients

  • 1 tbsp bacon grease
  • 1/3 cup pork rind ((Bakenets))
  • 3 tbsp grated parmesan cheese
  • 2 tbsp whey ((Bakenets))
  • 1/2 tsp baking powder
  • 1 pinch kosher salt
  • 2 tbsp sour cream
  • 1 large eggs
  • 3 tbsp egg whites
  • 1/8 tsp extract ((Bakenets))
  • 1 tsp unfiltered apple cider vinegar
  • 1 drop stevia ((Bakenets))

Instructions

  1. Preheat oven to 400°.
  2. Add 1/2 tablespoon of bacon grease to 2 mini cornbread skillets (3-inch).
  3. Place skillets on a baking tray and heat in oven for 3-5 minutes.
  4. Make cornbread while pans preheat.
  5. Mix dry ingredients in a bowl.
  6. Stir to combine.
  7. In a separate bowl, combine wet ingredients and stir until evenly mixed.
  8. Add wet to dry ingredients and stir with a spatula until batter is smooth.
  9. Carefully brush hot bacon grease onto the sides of the hot skillets.
  10. Divide between preheated cast iron pans.
  11. Bake at 400° for 8-12 minutes.
  12. Check at 8 minutes.
  13. Remove and serve immediately with plenty of butter.
