Low-Carb Keto Chicken “Noodle” Soup

Ingredients

  • 2 tbsp coconut oil
  • 1 lb boneless skinless chicken thighs
  • 1 cup diced celery ((* see note))
  • 1 cup carrots ((* see note))
  • 3/4 cup green onions ((* see note))
  • 6 cup chicken stock
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • 1 tsp sea salt ((* see note))
  • 1/8 tsp ground pepper ((* see note))
  • 2 cup noodles ((* see note))

Instructions

  1. To make in an Instant Pot: Add coconut oil and chicken thighs to the bowl of your Instant Pot.
  2. Set on saute and cook for 10 minutes, until chicken is just about cooked through.
  3. Shred with a fork.
  4. Add celery, carrots and onions.
  5. Cook for another 2 minutes.
  6. Add remaining ingredients.
  7. Cover and set on “soup” setting for 15 minutes.
  8. Once complete, add daikon noodles and serve.To make on a stove top: Add coconut oil and chicken thighs to a large saucepan.
  9. Cook on medium for 15 minutes, until chicken is just about cooked through.
  10. Shred with a fork.
  11. Add celery, carrots and onions.
  12. Cook for another 5 minutes.
  13. Add remaining ingredients.
  14. Cover and bring to a boil.
  15. Reduce heat and simmer for 25 minutes.
  16. Once complete, add daikon noodles and serve.
