Low Carb Keto Breakfast Burrito with Bacon and Avocado

Ingredients

  • 4 eggs (pasture-raised)
  • 2 tbsp unsweetened almond milk
  • ghee as needed (for greasing)
  • 4 strip bacon ((pasture-raised))
  • 1 medium tomatoes ((pasture-raised))
  • greens ingredient (Fresh)
  • 1/2 avocado (sliced)

Instructions

  1. Whisk together the eggs and almond milk in a mixing bowl.
  2. Heat a skillet over medium heat and lightly grease with ghee.
  3. Pour half of the mixture into the pan to coat the bottom thinly.
  4. Cover and cook for 3 minutes.
  5. Use a spatula to transfer to a plate.
  6. Pour the remaining mixture into the skillet and cook for an additional 3 minutes, covered.
  7. Top each egg “tortilla” with bacon, tomato, greens and avocado.
  8. Roll and enjoy!
